Ingredients
Prepare Malai rolls:
-Dalda cooking oil 1 tbs
-Pista (Pistachios) peeled & chopped 1 tbs
-Badam (Almonds) peeled & chopped 1 tbs
-Khajoor (Dates) chopped 6
-Doodh (Milk) ¾ Cup
-Milk powder ¼ Cup
-Cream 3 tbs
-Bread slices 7
-Dalda cooking oil ¼ Cup
Prepare Sheer Khurma:
-Dalda cooking oil ¼ Cup
-Pista (Pistachios) boiled & chopped 2 tbs
-Badam (Almonds) boiled & chopped 2 tbs
-Chuwaray (Dry dates) Soaked & deseeded 6-8
-Sawaiyan (Vermicelli) crushed 40g
-Kishmish (Raisins) 10-12
-Doodh (Milk) boiled 1 liter
-Sugar ½ Cup or to taste
-Elaichi powder (Cardamom powder) ½ tsp
-Kewra water 1 tsp
-Pista (Pistachios) as required
-Dried rose petals as required
Direction:
Prepare Malai Roll
-In a pan, add dalda cooking oil, & heat it.
-Add pistachio, almonds, fry for 30 seconds.
-Add dates, milk, milk powder, cream, mix & mash well, cook on low flame for 5-6 minutes.
-Turn off the flame, malai mixture is ready, let it cool completely.
-Trim edges of bread slices, spread 1 tbs of prepared creamy dates mixture, roll it properly.
-In a pan, add dalda cooking oil, heat it, fry prepared stuffed rolls on low flame until golden, change the sides in between, take out & set aside, malai roll is ready.
Prepare Sheer Khurma
-In a cooking pot, add cooking oil, heat it.
-Add pistachios, almonds, dry dates, mix well, fry on low flame for 2-3 minutes.
-Add vermicelli, mix well, raisins, mix well, fry on low flame for 2-3 minutes or until fragrant.
-Add boiled milk, sugar, cardamom powder,mix well & bring it to boil, cook on low flame for 8-10 minutes or until it thickens.
-Add kewra water, mix well, cook on medium flame for 4-5 minutes, sheer khurma is ready.
-In a serving dish, add prepared malai rolls, prepared sheer khurma, garnish with pistachios & dried rose petals!
